This is particularly the case with frozen mushrooms, which can contain up to 90% water. Thanks to freezing, the organoleptic qualities of the mushrooms are preserved (appearance, taste, texture, etc.). At Borde, they are stored and preserved in a negative cold room at -18 degrees.
