Casareccia with peas and onions
Ingredients for 4 people:
400 g. Casareccia pasta
150 g. peas
1 teaspoon of tomato concentrate
some chopped parsley
4 or 5 big onions
1 thin slice (about 5 cm) of diced lard
extra virgin olive
salt, pepper
Preparation time: 12 minutes
Cooking time: approx. 35 minutes
METHOD
Slice the onions and fry in the diced lard and some oil. Allow to become tender and slightly brown, add some water if necessary. When the onions are well cooked add the tomato paste and peas. Add salt, pepper and some water and cook in a covered saucepan for about 15 minutes. In the meantime cook the casereccia pasta in plenty of boiling water until it is al dente. Drain it, dress it with the tomato, pea and onion sauce, add a little olive oil and chopped parsley. Serve hot.
