Their name derives from the verb "affettare" ("to cut" or "to slice"), since they are obtained by rolling out the dough into a thin sheet and cutting it into slices. Giuliano Tartufi fettuccine with summer truffle is a tipical Italian dish, combination of summer truffle with durum wheat flour and eggs. Texture is perfect: some butter and Parmigiano Reggiano are enough to obtain a great first course.

Cook the Giuliano Tartufi fettuccine with summer fruffle in abundant salted water, drain when al dente and finish cooking in a pan with a few knobs of butter and a few spoons of Parmesan.
