Linguette with tuna, olives and artichokes

 Linguette with tuna, olives and artichokes

 


Ingredients for 4 people:


250 g Linguette
150 g stoned green and black olives
100 g tuna in oil
1 hot pepper
extra virgin olive oil
pepper
300 g ripe tomatoes
4 small artichokes in vinegar 2 cloves of garlic
parsley
salt

Preparation time: 15 minutes
Cooking time: 20 minutes


METHOD


Sauté the crushed garlic and the hot pepper with the extra virgin olive oil in a pan for some minutes.
Add the strained tuna, the olives and the sliced artichokes and mix for αbout 5 minutes. Add the peeled tomatoes cut into pieces and cook for 20 minutes more. Meanwhile, cook for 1 minute and half the Linguette in plenty of salted boiling water and strain aΙ dente. Μix in the frying pan with the sauce and toss for 1 minute more. Sprinkle with lots of chopped parsley and serve.
