Our dairy in Udabe-Beramendi (Navarra), which counts on a family tradition for the elaboration of artisan savory cheeses, produces for Olmeda Orígenes this premium "Idiazábal Natural DOP" Cheese with Denomination of Origin, regulated by the strict DO Idiazabal Regulating Board. Elaborated from the milk of Latxa and Carranzana sheep breeds, Olmeda Orígenes Idiazabal cheese is raw, manually molded and left to age for 5 months to guarantee the best quality. It is straw-coloured with a characteristic intense but mild aroma. Its flavour is profound, savory and with a wide, mouth-filling sensation. It has a light touch of herbs, pasture and with an aftertaste reminiscent of hay.
