Orecchiette with turnips
Ingredients for 4 people:
500 g Orecchiette
3 cloves of garlic
1 hot pepper
1 kg turnip tops
2 fillets of pickled anchovy
extra virgin olive oil
Preparation time: 40 minutes
Cooking time: 20 minutes
METHOD .
Wash and trim carefully the turnip tops so that even the tenderest leaves remain.
Meanwhile, bring the salted water to the boil in a big pasta pot for orecchiette. When the water is boiling, add the orecchiette and stir to prevent sticking. Pour the olive oil in a frying pan and brown the crushed garlic on a moderate heat. Lower the heat and add the anchovies, wαshed and chopped, and the hot pepper. Allow all ingredients to savour for a couple of minutes. When the pasta is haΙf cooked, add the turnip tops in the cooking water. Finish cooking, strain and stir over a bright flame in the frying pan with the oil. Discard the cloves of garlic.
